1 cup water
1 cup quinoa
handful yellow beans, cleaned and chopped
1 red pepper, chopped
1 tomato, chopped
1/4 cup feta, crumbled
1/8 cup olive oil
1/8 cup vinegar
juice of half a lemon
dash of hot sauce
fresh parley and chives
salt and pepper
Bring the water to boil in a small saucepan.
Add the quinoa and simmer for 15 minutes.
About 3 minutes before the quinoa has finished cooking, toss the beans into the hot water.
While everything is cooking, mix the rest of the vegetables and dressing ingredients together in a big bowl.
Drain the quinoa and beans, rinsing in cold water until cool.
Add the beans and quinoa to the vegetables, stirring to mix everything together.
Chill for at least an hour, or overnight, before serving.
