Inspired by Andrew’s Chocolate Walnut cookies over at Slashfood, I decided to do some baking tonight. These are basically a variation on a Chipits theme, with some whole wheat flour to bulk them up. The whole wheat is a trick of my grandma’s – it gives the cookies a chewier texture, and makes them seem a little bit healthier.
1 cup margarine, softened
1 cup brown sugar
1/2 cup white sugar
1 tsp almond extract
1 1/2 cups white flour
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
1/2 cup walnuts, chopped
Cream together the margarine and sugars until smooth.
Beat in eggs and almond extract until mixture is nice and fluffy.
Mix together the dry ingredients, then carefully stir them into the creamed batter.
Add the chocolate chips and walnuts, stirring to combine.
Drop by teaspoonful onto a baking sheet and bake for 8-10 minutes at 350ºF.
